Common types of Potatoes
Who doesn’t love potatoes? Potatoes are one of those vegetables that almost everyone loves and they come in many forms. Some like it in the form of chips while some like them mixed with other dishes. Before we get into detail of the different types of potatoes you should keep in mind that all potatoes fall into 3 categories:
- Waxy
- Starchy
- And “all purpose”
The starchy potatoes are ideal for frying and baking, while the waxy potatoes having a much smoother skin. They are best for cooking stews, soup, or even scalloped potatoes. And finally the “all purpose” potatoes can be used for any kind of dish you want.
There are a lot of different varieties of potatoes to choose from and these are the most common:
The Russet potato (starch potato)
A lot of people think that this is the classic potato as well as the most common one used. The russet potato is ideal for frying, baking and mashing!
The Jewel Yam potato (starch potato)
This potato is actually a sweet potato which is ideal for baking or roasting.
The Japanese Sweet potato (starch potato)
The Japanese sweet potato has two different kinds of skin color. They are pink or purple and have a white flesh from the inside. This potato is very sweet in flavor and can be used for grilling, baking or steaming.
The Hannah Sweet Potato (starch potato)
Similar to the Jewel yam potato but has a much lighter flesh and skin.
The Rose Finn Apple potatoes (waxy potato)
The rose fin apple potato is an heirloom fingerling often with a pink, knobby skin and golden buttery yellow flesh. This type of potato is ideal for having boiled, sauteed, grilled, fried or even served with salad.
The Russian Banana potato (waxy potato)
The skin color of this potato is pale yellow and the color of its flesh is rich yellow. The Russian banana potato has a firm texture and tastes quite good while grilled, fried, sauteed roasted or even steamed.
The red thumb potato (waxy potato)
This type of potato is every chef’s favorite choice and is best while boiled or roasted. The color of this potato is red skin while pink flesh.
Some of the other kinds of waxy potatoes are French fingerling potato, Larette Potato and the Austrian Crescent potato. The all-purpose potatoes are the Red gold potato, Purple Majesty potato, the Norland Red potato, the Yukon gold potato, the Kennebec potato and the Old blue potato.
